2 cocoa powder
This is the dried powder formed from chocolate liquor after the cocoa butter content has been reduced. This mixture is then dried and ground into a fine powder. Dutch process cocoa has been treated with alkali to give a darker appearance and less bitter taste. Breakfast cocoa has sugar, milk solids, and other flavorings added to it. -
3 baking powder
A leavening agent combining an acid with bicarbonate of soda to form the gas which enables baked products to rise. The chemical reaction between the acid and the soda produces carbon dioxide to leaven the product. The most common form of baking powder is the double acting variety, which produces gas upon mixing and again at high temperatures. Always store this tightly covered. -
4 curry powder
This is a mix of spices that we have come to know of by the Muslim variety found in stores. Yet this is a mixture that is unique to everyone's kitchen. They may be mild with spices like cumin, fennel, and coriander; or heated up a bit with chiles and pepper; or fragrant with cinnamon and saffron. 9 Madder Bleach
The most thorough bleach that cotton cloth receives. The process takes about four days and consists of several long boilings with alkalies and a final treatment with bleaching powder. It gives a full white and is generally used for goods to be printed. The usual procedure is as follows: - (1) Singeing to burn off all loose fibre. (2) Grey soaking, a simple steeping in water. (3) Lime boil, boiling in lime water for about ten hours under pressure, then washed in water. (4) Lime sour, a washing in cold acid solution of about 1 per cent strength. (5) and (6) Lye boilings in dilute solutions of caustic soda with resin soap for about ten hours. The sixth operation omits resin soap. (7) Chemicking, treatment in cold dilute solutions of bleaching powder, afterwards washing in water. (8) White sour, treatment in cold dilute acid solution as in No. 4. (9) Thorough washing in water and then drying. -
